We eat with our eyes first and our macaroons look every bit as delicious as they taste. Macaroons That Make a Difference At Miss Macaroon we hold the aims and objectives of a true social enterprise business close to our hearts. A social enterprise is a business that trades for a social and/or environmental purpose. It will have a clear sense of its ‘social mission’, which means it will know what difference it is trying to make, who it aims to help, and how it plans to do it. It will bring in most or all of its income through selling goods or services with clear rules about what it does with its profits, reinvesting these to further its ‘social mission’. With every penny we make reinvested into helping unemployed young people gain the skills that will change their life, we look to bring perfection, passion and vibrancy to all of our scrumptious products to allow us to do this. The Macaroons That Make a Difference programme is our 10 week course for 18 – 35 year olds who are long term unemployed in the Midlands. Trainees on our MacsMAD Catering course spend five weeks in our training kitchen learning the skills to enter a professional workplace. They then graduate up to our production kitchen and learn alongside professional Chefs. MacsMAD enables trainees to build their confidence, achieve greater independence and access career opportunities. About Rosie First and foremost Rosie is our CEO and founder, but as a small team, Rosie can still be found in the kitchen at least once a week making batches of her famous macaroons. After gaining a degree in Fine Arts from Leeds Beckett University. Rosie went on to train as a high-end pastry chef at University College Birmingham and developed her passion for premium quality food. After graduating Rosie became Commis Chef at the Michelin starred restaurant Purnell’s and trained under the prestigious and widely known owner and Michelin starred chef Glynn Purnell. Rosie’s final cheffing job before the birth of Miss Macaroon was becoming pastry chef at the Hyatt Hotel. Rosie is now the proud founder and CEO of Miss Macaroon which she set up with just £500 of her own money in 2011. Since its foundation Rosie has now achieved a wide range of accolades to her name including her most recent award of MBE for her work mentoring young people with multiple and complex needs. About Miss Macaroon Miss Macaroon set up in 2011 with just one team member, a small kitchen space, £500 and a whole load of determination. At Miss Macaroon we are relentless in our pursuit of improvement, so over the years we have harnessed art and science to create some of the most modern, premium macaroons on the market today. Our secret recipe and methodology is scientific in its approach – we are the only patisserie in the world to use a Pantone matching service devised from a system routinely used in artistic industries. The luxury element is delivered via our quality ingredients and Michelin starred experience. Our ingredients are precision measured and heated to an exact temperature for the perfect sugar syrup and our almonds are ground using state of the art machinery, usually found in Michelin starred restaurants. We then add the almond meal to perfectly whipped egg whites and the sugar syrup – with just the right amount of moisture in the mix to bond the egg proteins together – to ensure the finished product’s outer shell has that characteristic fine egg shell crack you expect from an amazing macaroon. www.ceotodaymagazine.com CEO Today United Kingdom Awards 2023 43 “Our mission is clear: To improve the lives of young people in our community by providing moments of sublime indulgence to our customers.”
